Blaue Stunden Silvaner 2015 edelsüß

Ingredients

• 1000 gFirm cooking apples (e.g., Boskoop)
• 150 gFine granulated sugar
• 80 gButter
• 1 rollFresh puff pastry
• 2 tbspLemon juice
• 1 pieceVanilla bean
• 1 pinchSalt

Preparation

1. 1Preheat the oven to 200 degrees Celsius top/bottom heat.
2. 2Peel and quarter the apples, remove the core, and toss with a little lemon juice.
3. 3In an ovenproof skillet, slowly melt the sugar over medium heat until a golden brown caramel forms.
4. 4Carefully stir the butter, the scraped vanilla bean seeds, and a pinch of salt into the liquid caramel.
5. 5Arrange the apple quarters tightly next to each other with the curved side down in the caramel and gently simmer for 10 minutes.
6. 6Place the puff pastry over the apples, tuck the edges inward, and prick the dough several times with a fork.
7. 7Bake in the oven for about 25 minutes until golden brown and crispy.
8. 8Let the tarte cool briefly and carefully invert it onto a large plate.
