The grapes were selectively harvested by hand on October 11, 2014; spontaneously fermented after 42 hours of skin contact using natural ambient yeasts; aged in a used 500-liter wooden barrel; matured on the lees for an extended period and bottled unfiltered on July 8, 2015. Uncompromising, puristic, Franconian dry and with a pronounced tannin structure, the Aussteiger shows what Silvaner is capable of when leaving the beaten path. The natural wine comes with a bold color, is smoky and edgy, albeit somewhat tamed after all these years. A true delight for anyone who appreciates natural wines.

Juicy chicken skewers with a savory miso glaze and delicious smoky flavors from the grill, finished with fresh spring onions and sesame seeds.
