What does natural wine actually mean?
The term "natural wine" is not legally defined and is used in very different ways. Therefore, the range of wine styles is broad. We ourselves struggle a bit with the term because it quickly pigeonholes wines.
If you will, we see our wines as a step in this direction: with as little intervention as possible in the vineyard and cellar, but always with the goal of producing a harmonious wine with character and drinkability.
Why does Thomas Plackner produce exclusively Silvaner?
Silvaner is the grape variety that best reflects our home region of Franconia. It is incredibly versatile and shows origin, soil, and vintage in a special way. Exactly this diversity fascinates us – which is why we dedicate ourselves entirely to Silvaner.
Are you organically certified?
No. As a small winery, the administrative effort for organic certification is currently disproportionately high for us. Nevertheless, we work according to the principles that are important to us: we rely on biological plant protection, promote biodiversity in the vineyard, and are guided by biodynamic methods.
For us, the seal is not primarily what matters, but rather a responsible approach to the soil, vines, and nature – because that is precisely where the quality of our wines originates.
Which foods do the wines pair with best?
Silvaner is a versatile food companion – from vegetables and fish to hearty dishes. With each wine, you will find suitable food recommendations that bring out its strengths particularly well.
Should I decant the wines or serve them in a special way?
Our wines benefit from some air in the glass or in the carafe. Do not serve them too cold – this allows their aromas and full diversity to unfold best.
And please remember to use a large glass (Burgundy or Bordeaux red wine glass).
How long can I store the wines?
Our wines are made for longer aging and continue to develop over years. When stored in a cool and dark place, they often gain additional smoothness.
Why does Silvaner taste a little different every year?
Every vintage brings different weather conditions and thus its own character. We intervene only as much as necessary so that these differences are reflected in the wine. Exactly this makes every vintage unique.
Can I also taste or buy the wines directly on-site?
Yes. By prior arrangement, we look forward to welcoming you and presenting our wines to you in person.
