The grapes were harvested on October 2, 2012 with 100° Oechsle; 50% skin contact fermentation, 40% stainless steel, 10% second-use barrique (Allier Medium Toasted, Tonnellerie Berthomieu). The wine: Light yellow with yellow-green highlights. On the nose, it already shows its daring side. Wonderfully concentrated fruit notes of Williams Christ pear, ripe Boskop apples, and hay flowers. On the second sniff, notes of violets, rosemary, thyme, and woodruff. On the palate, creamy and juicy at the same time, dense, complex. A Silvaner with class!

Tender pink-seared quail breast served on an aromatic bed of Beluga lentils, enhanced with fresh rosemary, thyme, and fine vegetable dice.

From a large glass – e.g. a Bordeaux or Burgundy glass – the powerful aromas come into their own best with more air.
